Blueberry Overnight Oats

INGREDIENTS

1/2 cup gluten-free oats

1 tablespoon pumpkin seeds

1 teaspoon chia seeds

1 teaspoon goji berries

1/4 teaspoon or more cinnamon

splash of vanilla extract

1/3 cup or more plain or greek yogurt or kefir (or plant-based yogurt)

1 cup plus more almond milk or coconut water (I use a combo)

1/2-1 orange, juiced

1/4-1/2 cup frozen wild blueberries


METHOD

Place all ingredients into a large glass container. Stir well.

Refrigerate overnight. Taste and see what it needs. If it's too thick, add more yogurt, almond milk, and/or coconut water.
