Celery Root Mash

INGREDIENTS

celery root, peeled and cut into small chunks

kosher salt

fine grain salt

pepper

parsley, chopped

olive oil

lemon zest

lemon juice (optional)

red chili flake (optional)

METHOD

Bring a pot of water to a boil and add in a little less than a tablespoon of kosher salt. Add in chopped celery root and cook for about 10-12 minutes or until the chunks are soft.

Drain the celery root and return to the pot. Use a masher, immersion blender, vitamin, or fork to mash the celery root to the desired consistency. Season with salt, pepper, chili flakes if using, lemon zest, a splash of lemon juice, parsley, and olive oil. If you want this to be richer and are not following a SIBO protocol, you can use butter instead of olive oil.
