Dijon + Ramp Dressing
INGREDIENTS
1-2 teaspoons dijon mustard (depending on how mustardy you like it)
1 clove of garlic, finely chopped
juice from 1 lemon
3 tablespoons ramp vinegar
1/4-1/2 teaspoon honey or maple syrup
1/4 cup plus 2-3 teaspoons extra virgin olive oil
1/2 teaspoon or more sea salt
black pepper
METHOD
In a mason jar, combine mustard, garlic, lemon juice, ramp vinegar, honey, olive oil, salt, and pepper. shake well. taste and adjust. does it need more oil? more acid? more salt? more sweetness?
Toss with salad of your choice! i used mixed greens, endive, blanched/steamed greens, tomatoes, roasted potatoes, chicken, and dill.
