Quinoa-Chickpea Tabbouleh Salad

INGREDIENTS

cooked quinoa (learn how to cook quinoa here)

cooked chickpeas

cucumber, diced

cherry tomatoes, halved

watermelon radish, chopped

fennel, chopped

kalamata olives, halved/quartered

chopped mint, parsley, and dill

lemony salad dressing (find the recipe here)

feta (optional)

METHOD

In a large bowl, combine cooked quinoa, chickpeas, cucumber, tomato, radish, fennel, olives, and herbs.

Toss with dressing, serve over lettuces, and sprinkle with feta.
