Herby Chickpea Chopped Salad
INGREDIENTS
Persian cucumber, cut into half moons or diced
Cherry tomatoes, halved
Chopped herbs such as dill, mint, and/or parsley
Cooked chickpeas
Feta or avocado (optional)
For the dressing: eyeball dijon mustard, apple cider vinegar, maple syrup/honey, olive oil, salt, pepper, garlic (optional) or just lemon, olive oil, salt, and pepper
Serve with protein of your choice such as salmon, chicken, tofu, or tempeh
METHOD
Add all the ingredients to a bowl and add some dressing. Toss well and enjoy!
