Roasted Cauliflower with Dates, Slivered Almonds, and Herbs

INGREDIENTS

  • Cauliflower, chopped into florets

  • Avocado oil

  • Fine grain sea salt

  • Black pepper

  • Dates, chopped

  • Slivered almonds or pine nuts, toasted in a pan

  • Lemon zest and juice

  • Olive oil

  • Torn herbs such as dill, mint, and/or parsley

METHOD

  1. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.

  2. Place the cauliflower florets onto the baking sheet and drizzle with avocado oil, sea salt, and black pepper. Toss well. Roast for 25-35 minutes or until cauliflower is tender and golden.

  3. Allow the cauliflower to cool down for about 5 minutes. Then, combine with the dates, slivered almonds or pine nuts, lemon zest, a squeeze of lemon, a drizzle of olive oil, and herbs. Toss well to combine. Taste and adjust for seasoning (salt? pepper? lemon?). Enjoy!
