Kale Salad with Sesame-Tahini Dressing

INGREDIENTS

chopped kale

julienned carrot

shelled edamame

cooked green beans

cooked quinoa

2 tablespoons tahini

1/2 tablespoon sesame oil

~1 teaspoon soy sauce

~1 teaspoon coconut aminos

~1/2 -1 teaspoon rice vinegar

water

black pepper

garnish with furikake

METHOD

  1. In a bowl, whisk together tahini, sesame oil, soy sauce, coconut aminos, rice vinegar, and pepper. Add water to reach desired consistency. Taste and adjust for seasoning.

  2. Place chopped kale in a large bowl and drizzle a little bit of the dressing. Massage the dressing into the kale using your hands.

  3. Add carrot, edamame, green beans, and quinoa. Toss and add more dressing. Enjoy!
