Swiss Chard and Farro Frittata

INGREDIENTS

1/2 yellow onion, thinly sliced

olive oil

red chili flakes

1/2 bunch of swiss chard, stems removed and thinly sliced

swiss chard stems, thinly sliced

1 cup mushrooms (I used shiitake), sliced

fine grain sea salt

pepper

7 eggs

1 cup parsley and basil, finely chopped

1/4 cup chopped parmesan plus shaved parmesan for garnish

1/2 - 1 cup cooked farro or quinoa

METHOD

  1. Preheat the oven to 400 degrees F. Brush a baking sheet (I used a small toaster oven sheet which was 10.5x8x2 inches) with olive oil. Line the baking sheet with parchment paper and brush paper with more oil.

  2. In a large pan, heat up 1 tablespoon of olive oil. Add onion and swiss chard stems. Sauté until onions begin to brown and then add mushrooms and chili flakes. Add more oil, if needed. Cook for a few minutes and then add swiss chard leaves, salt, and pepper. Sauté until swiss chard is wilted.

  3. Crack eggs into a bowl and whisk. Add chopped herbs, parmesan, salt, pepper, and farro. Whisk.

  4. Pour vegetables into to the baking sheet followed by the egg-farro mixture.

  5. Top with shaved parmesan and bake in the oven for 20-25 minutes. Enjoy!
