Upgraded Salmon Salad

INGREDIENTS

1 can salmon (I like the one from vital choice)

mayo (I like Primal Kitchen’s avocado oil mayo)

dijon mustard

lemon juice

capers

dill, chopped

parsley, chopped

pepper

salt (optional)

cucumber, chopped

tomato, chopped

radish, chopped

any other veg you like

salad greens of your choice

METHOD

In a bowl, combine salmon, a spoonful of mayo, a spoonful of mustard, capers, lemon juice, dill, parsley, and pepper. Mix together and taste for salt or seasoning. If you like it more tangy and sharp, add more lemon and dijon; more creamy, add mayo.

Serve on a bed of lettuce and veg!
