Smoky Tofu Crumbles

INGREDIENTS

two 14 oz packages of extra-firm tofu, drained

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon chili powder

3/4 teaspoon cumin

1 teaspoon garlic powder

1/4 teaspoon turmeric

1 teaspoon brown/coconut/cane sugar

1/4 teaspoon pepper

1/2 teaspoon salt

METHOD

  1. Preheat oven to 400 degrees F convection or 425 degrees F regular.

  2. Line a large baking sheet with parchment paper.

  3. Press tofu for at least 30 minutes according to these instructions.

  4. While tofu is being pressed, prepare spice mix. In a small bowl, combine paprika, chili powder, cumin, garlic powder, turmeric, sugar, salt, and pepper. Mix.

  5. When tofu is done, use your hands to crumble tofu blocks into small pieces. Place in a large bowl.

  6. Add 3 tablespoons of olive oil to the tofu along with some of the spice blend (you will likely have extra to use another time).

  7. Use your hands to mix the tofu with the oil and spices.

  8. Spread tofu in an even layer on the baking sheet.

  9. Bake in the oven for 25-30 minutes, or until golden brown and slightly crispy.

  10. Serve with a tortilla, cilantro-lime rice, plantains, veggies, and/or smoky cabbage slaw.
