Tofu + Shirataki Noodle Salad with Spicy Peanut Dressing

SALAD INGREDIENTS

Chopped lettuce(s) of your choice such as mixed greens, spinach, romaine, little gem, radicchio, and/or purple/green/napa cabbage

Persian cucumber, thinly sliced

Carrot, thinly sliced

Fresh herbs such as cilantro and/or mint, chopped

Shirataki noodles, prepared according to package instructions

Roasted tofu or protein of your choice such as salmon, chicken, tempeh, and/or edamame

Microgreens (optional)

DRESSING INGREDIENTS

1 heaping tablespoon peanut butter or more for a thicker, creamier dressing

1 tablespoon soy sauce

1 tablespoon coconut aminos

1 tablespoon toasted sesame oil

1 tablespoon unseasoned rice wine vinegar

1 tablespoon lime juice

Sriracha or zhong sauce to taste

Maple syrup to taste (start with a splash)

METHOD

  1. Prepare the dressing. In a bowl, combine the peanut butter, soy sauce, coconut aminos, toasted sesame oil, rice vinegar, lime juice, sriracha/zhong sauce, and maple syrup. Whisk well. Taste and adjust for seasoning. You can also add grated ginger and/or garlic if you like.

  2. Assemble the salad. In a large bowl, combine the lettuce, cucumber, carrot, herbs, noodles, protein of your choice, herbs, and micro greens if using. Pour as much dressing as desired and toss well. Enjoy!
