Vegetable Fried Rice

In a large pan, sauté sliced onion in olive oil until translucent and add in red chili flakes

Add garlic and whatever veggies you have: I first sauté zucchini, green cabbage, and celery

After these have softened, I add sliced cherry tomatoes and kale. season with salt, pepper, and lemon juice 

Add leftover rice: I used basmati rice (you can also do less rice and add riced fresh/frozen cauliflower)

At this point, you can add in chickpeas like I did or scramble a few eggs right in the pan or in a separate pan

Top with freshly grated parmesan
