Vegetable Frittata

INGREDIENTS 

1 small yellow onion, thinly sliced

3-4 small potatoes, cut into small cubes

5-6 brussel sprouts, thinly sliced 

1/2 zucchini, cut into chunks 

1 clove of garlic, chopped finely

8 eggs

2-3 T finely chopped herbs (like basil and parsley)

1 T or more of olive oil

lemon juice 

cherry tomatoes, cut in half

shaved Parmesan

salt and pepper 

red chili flakes 

METHOD

Preheat oven to 375 degrees

Sauté onion in a 8 or 9 inch skillet (no oil) for 5 minutes 

Add oil and potatoes. Sauté until golden, about 10 min then add brussel sprouts, zucchini, garlic, chili flakes, salt, pepper. Sauté until everything is cooked through. 

Squeeze in some lemon 

Beat eggs in a bowl. Season with salt and pepper, and add in herbs 

Pour eggs into skillet. 

Arrange tomatoes on top and sprinkle shaved parmesan

Cook in the oven for 5-8 minutes until eggs have set. You can also broil for 30 sec so that cheese becomes golden
