Creamy White Bean Dip

INGREDIENTS

1 can (~15 oz) white beans (cannellini/great northern beans), drained and rinsed with water

2 small cloves of garlic, chopped (if you don’t want your dip to be garlicky, I suggest starting with 1 clove of garlic before adding the second)

1/4 teaspoon lemon zest

1/2 large lemon squeezed plus more

2.5 tablespoons olive oil

1 ice cube

1/2 teaspoon salt

1/4 teaspoon pepper

Dash of cayenne

METHOD

Place all ingredients into a vitamix or food processor

Process until smooth and creamy

Taste and adjust for seasoning

Serve with crudités (cucumber, carrot, endive, radish, blanched broccolini, roasted sweet potato slices), crackers, toasted bread
